Open for all meals, Les Quais is Le Mauricia's main restaurant. It occupies a convenient location in the centre of the hotel and borders onto the slate-tiled pools.

Roofed terraces connecting onto large wooden decks create a relaxed setting for breakfast, lunch and dinner.

Large buffet spreads give guests' a chance to feast on delicious entrees, main courses and desserts that celebrate flavours from around the world.

The décor, enhanced by white ceilings, is evocative of a marina wharf. Modern storage cupboards and cooking stations are shaped like boat hulls and there is even a stainless steel bridge that spans over the buffet areas!

Smaller in capacity, Le Nautic is a quiet venue which will appeal to guests looking for a more intimate atmosphere for lunch and dinner.

Elegance and simplicity are at the heart of the concept. The restaurant features two split-level terraces which face the sea towards the setting sun. The interiors provide a sense of cool sophistication with white interiors enhanced by natural light by day and muted lighting at night. 

Timber flooring and contemporary teak furniture complete the venue's minimalist chic.

Here, guests will enjoy fine cuisine which uses only the freshest bounty of the sea.

Popular with guests, the Bay Watch Bar sits at the edge of the main pool, opposite the restaurants. It is located close to La Rhumerie, the hotel's in-house discotheque. As its name suggests, it also faces onto the bay where many pleasure boats are moored.

Guests can have a quiet drink looking at the view. It is a great spot to make new friends and socialize during their holiday in Mauritius.
Open till late, the bar is also a nice place to enjoy the hotel's live entertainment at night.

The Mauritian chef, Adegeen Chinapiel has been at the helm of the kitchens at Mauricia Beachcomber for the past two years. He started his career with Beachcomber Hotels 14 years ago and demonstrated dedication and enthusiasm in the kitchen from day one. 

Starting out as a cook he moved on swiftly to the role of sous-chef and chef. Adegeen Chinapiel then achieved his ultimate goal to expertly fill in the role of Executive Chef.
Throughout the years, Adegeen Chinapiel's motivation has pushed him to constantly enrich his skills through international competitions and courses. As a dynamic team leader for Mauricia Beachcomber at the internationally recognised Black Box Competition, he was awarded a bronze medal.
This young and enthusiastic Executive Chef is particularly influenced by Oriental and Hispanic cuisine and "loves to create new dishes using fresh, local products".
Adegeen Chinapiel's experience at Mauricia Beachcomber added to his love for innovative cuisine, ensures a choice of original dishes in the two restaurants of the hotel. 

 

Chef's Recipe

    Fish trilogy half roasted-half steamed with tropical flavours

Ingredients

  • 160 g sacré chien, 160 g tuna, 160 g sea bream

  • 50 g kiwi, 50 g pineapple, 50 g melon, 50 g kumquat

  • 100g palm heart

  • 50 g black olives

  • 20 g gherkins

  • 5 g basil

  • 30 g butter

  • 1 tsp mustard

  • 20 g raspberry purée

  • 1 tsp saffron powder

  • 10 cl white wine

  • 1 onion

  • Parsley

  • Garlic

  • Ginger

  • Olive oil

  • Shallots

  • Salt & pepper

Preparation

Season the fish fillets with salt, pepper and olive oil. Store in the refrigerator.

For the fruit caponata: Cut all the fruit into small cubes and sauté in a little butter and add a few drops of lemon juice.

For the tapenade: Chop the olives, gherkins and onions into very small cubes and add the parsley (very finely cut). Add salt and pepper to taste.

For the palm heart pickle: Slice the palm heart. 

In a pan heat the garlic, ginger and 20 g of onion, using only a trickle of olive oil, until golden brown. Add the mustard, saffron, half a spoon of vinegar and finally the sliced palm heart. Add salt and pepper to taste. 

For the raspberry sauce: Place a little white wine, fresh cream and shallots in a pan and reduce volume to half. Add 25 g of butter and the raspberry purée. Sieve the preparation and season to taste. 

For the fish: Grill the fish in a little olive oil.

PRESENTATION

Decorate the plates and add the fish straightaway. Serve while hot.
