All three restaurants open onto the beach and sea to promote outdoor living in the tropics and are designed to suit different profiles.

Open for all meals, Le Superbe is the hotel's main restaurant where guests will enjoy comprehensive buffets featuring international cuisine.

Live cooking shows are highlights of any meal at Le Superbe. Food is cooked freshly in front of guests who also take great pleasure in watching the kitchen staff and chefs demonstrate their skills.

One section of the restaurant is entirely dedicated to the buffet displays whereas the other part is well segmented to create distinctive venues for guests to choose from: inside the restaurant itself, beside the pool or on the open-air terrace.

Children may eat in a space specially designed with kids in mind and equipped with small tables and chairs.

Open for dinner, La Casa is the hotel's Italian restaurant. The name of the restaurant which means "home" in Italian gives a hint as to what to expect. One thing is for sure, guests will definitely taste the care that goes into the preparation of each dish!

Romantic would aptly describe the restaurant which enjoys a secluded location that overlooks Port-Louis' twinkling skyline.

The elegant décor is in keeping with the authentic Italian style, with warm wood tones and wrought iron furniture.

The menu features a wide array of Mediterranean classic recipes including risottos, pastas, salads, delicious anti-pasti and many other delights.

A meal by the beach might prove the perfect complement to a day at Le Victoria.

Open for lunch and dinner, L'Horizon restaurant somehow evokes the atmosphere of a charming fishermen's village where guests are invited to sample fresh fish and seafood chosen from the best catches of the day. 

The restaurant features two distinctive areas. According to their mood, guests can eat under a large thatched roof with fishing nets hung here and there to recreate a typical setting or they may choose a small table set in the sand.

For the past seven years, he has been guiding the teams at Victoria Beachcomber, expertly passing on his knowledge and passion for fine cuisine.

Nived Puresh's dedication and talent were noticed early on in his career. Starting out at the Pullman Hotel, which later became Mauricia Beachcomber, Nived Puresh was a keen member of the cooking team. He started out as a cook, then moving on to become Head Cook and Sous-Chef. In 1999, he joined the team at Victoria Beachcomber where he started as Sous-Chef.
From a young age, his passion for food and cooking took him across the world where he gathered precious experience and techniques that are now practiced within the four restaurants at the hotel.
Throughout his career, Nived Puresh has participated in culinary competitions and events, including the globally recognised Black Box Competition, a competition encouraging emerging foodservice professionals, whose mission is to deliver world class expertise in the food service industry.  
Nived Puresh's extensive knowledge of the Victoria Beachcomber complements his varied international experiences, enabling him to innovate and offer creative dishes and several styles of cuisine.

 

Chef's Recipe

    Duet of palm heart, roast prawn tails with coriander

Ingredients

  • 300 g palm hearts 

  • 120 g pawpaw 

  • 800 g prawns 

  • 25 g fresh ginger 

  • 100 g tomato 

  • 10 g garlic 

  • 20 g onion 

  • A few basil leaves 

  • A handful of rocket leaves

  • 140 ml coconut milk

  • 1 slice of bread/crouton

  • 20 ml balsamic vinegar

  • 30 ml olive oil

  • Salt & pepper

  • A handful of mesclun salad leaves

  • 50g palm heart

  • 1 onion

  • 1 chilli

  • 20 g tomato sauce

  • A few coriander leaves

  • 2 cloves of garlic

  • 20g Dijon mustard

  • Salt & pepper

Preparation

For the Palm heart soup: Blend the coconut milk and palm heart in a mixer to obtain a smooth, creamy texture. Season with salt and pepper and add a little olive oil. 

On the surface of the soup, add a few drops of balsamic vinegar, previously reduced to syrup.

For the Palm heart pickle: Cut the palm heart into small cubes of about 2-3mm and marinate in a mixture of mustard, saffron, garlic, salt and pepper.

Cut the bread/crouton into the shape of your choice and add the pickle on top.

Tip: Make sure to cut the palm heart quite fast so as not to lose the colour of the product. You can add a few drops of olive oil to preserve its quality. 

Make a tomato coulis and emulsify using a little olive oil.

Remove the heads and shells from the prawns before grilling with the coriander.

Place a spoonful of pickle and a few rocket leaves on a plate and place the prawns on top with a small bouquet of mesclun salad leaves. 

Cut the pawpaw into small cubes and season with salt and pepper and then add a little grated lemon.

PRESENTATION

Place all the above preparations artistically onto the plate and serve.
