Le Brabant, Paradis' main restaurant, opens for all meals. It enjoys a convenient location at the edge of the oversized main pool and overlooks the sparkling ocean. The spacious restaurant is cleverly segmented into smaller areas for more privacy and tranquility.

Spectacular buffets for breakfast and dinner allow guests to fill up on delicious food, some of which are prepared just the way they like it at individual cooking stations.

Theme buffets are a hallmark of the restaurant and guests can expect to sample in turn Asian food, Italian favourites, local specialities along with French classics at night.

The food is not the only star of an evening at Le Brabant with spectacular displays and decoration to match the set themes.

Lovers of Italian cuisine will simply fall in love with La Palma restaurant. Open for lunch and dinner, the chic restaurant nestles in the lush gardens in a lovely setting that opens onto the beach.

The restaurant has a limited seating capacity guaranteeing intimate dining or small gatherings. Within this one restaurant, guests can choose from three separate areas to savour their favorite Italian dishes. 

The restaurant's interior hits the perfect note of romance with a welcoming and warm ambience. A background of muted, rich, deep colours and terracotta paired with wrought iron evokes a classic Mediterranean style. The same theme carries onto the terrace protected from view by palm trees and exotic flowers.

Guests only have to step across the pathway to find themselves right on one of Mauritius' finest beaches to have lunch at La Palma Beach, an extension of La Palma restaurant where guests can eat in the shade of thatched umbrellas.

Offering a spectacular view over the sparkling sea, the Blue Marlin opens for all meals and specializes in fresh fish and seafood.

The restaurant's signature giant marlin hung from the ceiling in the grand dining room sets the tone and theme. Blue shades, wood and copper finishes and walls dotted with portholes evoke the top deck of a liner cruising the Indian Ocean.

The restaurant's sense of timeless elegance really comes to life at night. Guests bask in outstanding service while eating to the peaceful sound of the waves lapping onto the shore.

The elegant piano bar is another highlight of the Blue Marlin at night. Guests will be fascinated by the musician's eclectic repertoire and talent.

Located at the entrance of the Blue Marlin restaurant, the Blue Marlin Bar is small yet cosy. It has been designed for guests to enjoy pre-dinner drinks and cocktails while looking at the sea.

Located at the far end of the resort, La Ravanne welcomes guests for a wonderful dinner that takes Creole cuisine to new heights.

Weather permitting, the evening starts with a short boat ride inshore in a traditional pirogue. The pirogue departs from the beach in front of the Blue Marlin restaurant and drops off guests at La Ravanne's private jetty where they will enjoy a warm welcome to the sound of the traditional sega beat. 

Guests are invited to take their seats under rustic thatched kiosks set on individual decks laid out on the sand.

To add to the magic, the beach and the ocean act as a romantic backdrop. In this exquisite setting, guests will taste delicious Mauritian dishes prepared with the finest local ingredients.

La Ravanne also features an on-site bar that will tempt guests' taste buds with a range of drinks and cocktails created with authentic Mauritian rum.

La Ravanne is the perfect venue to discover the typical island lifestyle and enjoy the authentic taste of Mauritius.

Paradis' main bar is also famous for its delicious pancakes with a choice of fancy fillings served every afternoon!

The French chef Jean Christophe Basseau has been expertly directing operations in the kitchens of the Paradis for the past three years.

A long career has taken him to nine different countries and across three continents namely the United States, Africa and Europe where he has worked in highly prestigious establishments. Jean Christophe's creativity has contributed towards the conception of exceptional menus of international five-star resorts and he has worked with teams in award-winning gourmet restaurants.

Previous experience as Executive Chef at luxury properties such as the Oberoi Hotels & Resort (five-star resort in India), Le Méridien Bora Bora (five-star resort in French Polynesia) and at The Ritz Carlton (Florida and Hawaii) to name a few, have bestowed him with the necessary experience and initiative to oversee the everyday running of four unique restaurants. Today, his leadership skills within the team at Paradis guarantee excellence and gastronomic diversity.  

With a 'penchant' for fusion fine cuisine, Jean Christophe Basseau offers ideas for creative gastronomic dishes that bring together a mix of flavours and different types of cuisine.

Ingredients

  • 200 g palmheart
  • 2 pkts Bufala mozzarella
  • 200 g fresh tomatoes (cubed)
  • 100 g asparagus
  • 100 g courgettes
  • 100 g fish
  • 100 g carrots
  • 50 g bread, cut into small chunks
  • 320 g mixed lettuce leaves
  • 100 ml virgin olive oil
  • 30 ml balsamic vinegar
  • Salt and pepper

Preparation

  • Grill the vegetables and marinate them in the virgin olive oil, salt and pepper.
  • Mix the lettuce leaves in a salad bowl with the balsamic vinegar or the olive oil, salt and pepper.
  • Arrange the grilled vegetables around the lettuce.
  • Cut the mozzarella into cubes and arrange it over the lettuce with the palmheart and cubes of tomato.
  • Before serving, roast the small pieces of bread in the oven and then spread them over the lettuce leaves.
