Chef Gérard Sallé, the mentor behind our Executive Chef William Girard’s induction into the highly exclusive circle Maîtres Cuisiniers de France, will join us as guest chef for a unique four-hand dinner on Thursday, October 16, during our 40th anniversary week. An exceptional evening celebrating William’s achievement and the culinary bond that made it possible.

For the occasion, the chefs have crafted “Les Couleurs de la Méditerranée”, a refined menu that reflects the vibrant flavors and traditions of the Mediterranean. Your journey begins with freshly baked focaccia, black olive, and tomato breads, followed by delicate barbajuans with pine nuts.

You will then discover a Greek-style baby artichoke, filled with shrimp tartare and faye faye crab meat, before savoring a sea bass filet accompanied by ravioli leaves and a shellfish marinière with watercress. Next, you will enjoy braised lamb shoulder with pommes Anna and a Taggiasca olives jus, before concluding on a refreshing note with a lemon and basil dessert.

This four-hand dinner promises to be an unforgettable evening, where the richness of Mediterranean flavors meets the artistry of two remarkable chefs, blending mentorship, creativity, and celebration.

About Chef Gérard Sallé

 

 

Chef Gérard Sallé began his career in Michelin-starred kitchens in Paris, including the Bristol Hotel and Ledoyen. At just 24, he managed the prestigious Le Normandy Hotel in Deauville while developing several restaurants. 

He later led the culinary direction at Plaza Athénée, helping the restaurant regain its Michelin star, and earned another Michelin star at La Marée. Beyond fine dining, he has created exceptional experiences for high-profile events and now consults internationally, sharing his expertise while mentoring the next generation of chefs.
