Originario della Normandia, Olivier Belliard ha lavorato in prestigiosi hotel della capitale francese e poi del Kuwait, Tailandia, Egitto Arabia Saudita e Libano.

Perfezionato le sue tecniche a fianco di chef stellati della levatura di Eric Frechon, Mathieu Pacaud, Michel Rostang e Nicolas Le Bec. Incrociato diversi stili e tradizioni culinarie, dal mediterraneo, al thai, all’italiano, contemporaneo, vegetariano, giapponese e indiano.


Mauritius era già stata la sua ‘casa’ dal 2009 al 2014 prima di trasferirsi a San Francisco, innamorato dei suoi prodotti, profumi e del sorriso della sua gente, non ha resistito di fronte alla possibilità di ritornare quando gli è stato proposta la posizione di Executive Chef alla Shandrani Resort & Spa.
