Gamberone e capesante grigliate

Preparazione

  • Sgusciare il corpo del gamberone rimuovendo delicatamente il carapace lasciando il corpo attaccato alla testa.
  • Lasciar marinare con sale e pepe. Lasciare in fresco per 20 minuti.
  • Tagliare e affettare il finocchio. Condire con sale e pepe.
  • Fondere una noce di burro in una padella e un filo d'olio d' oliva.
  • Far rosolare il finocchio rapidamente per 2 o 3 minuti. E mettere da parte.
  • Salare e pepare la capasanta e grigliare per 1 o 2 minuti su entrambi i lati.
  • Disporre il finocchio al centro del piatto. 
  • Collocare delle fettine sottili di marlin affumicato di davanti al finocchio.
  • Disporre tre foglie di coriandolo fresco sul marlin, nonché due pachino tagliati a metà.
  • Alternare tre perle al sapore di fragola e mango nella parte anteriore del marlin.
  • Sovrapporre il finocchio, il gamberone con la testa in alto.
  • Passare la capasanta nel prezzemolo tritato solo su un lato.
  • Collocare la capasanta sul lato senza prezzemolo rivelando la griglia in alto a sinistra accanto al finocchio.
  • Infine aggiungere alcuni fiori commestibili sul piatto per la decorazione.
