Receita do Chefe

Fatia de atum, rémoulade de coração de palmito, vinagrete de folhas de Kaffir e gengibre

Ingredientes

  • 500g Coração de palmito
  • 10g Alho
  • 200ml Leite
  • 1pc Folha de Louro
  • 500g Atum (cortado em tiras)
  • 10g Wasabi
  • 10g Cebolinho
  • 10g Beterraba
  • 5g Cerefólio
  • 5g Endro
  • 10g Mesclun
  • 100g Açúcar
  • 15g Folha de Kaffir
  • 22g Gengibre
  • 10ml Azeite
  • 10g Rabanete vermelho
  • 33ml Molho de soja claro
  • 10g Sal
  • 5g Pimenta
  • 10g Lima

 

Procedimento

  • Puré de palma: levar a fervura a palma, alho, leite e folha de louro durante 30 minutos. 
  • Em seguida, passar pelo misturador.
  • Xarope de Kaffir: levar a ferver as folhas de kaffir, açúcar e lima  para obter um xarope.
  • Pasta de gengibre: passar o gengibre e azeite pelo liquidificador.
