Treccia di tonno, remoulade di Palmito, vinaigrette alle Foglie di Kaffir e zenzero

  • 500g Palmito
  • 10g Aglio
  • 200ml Latte
  • 1pz Foglia d'alloro
  • 500g Tonno (tagliato a strisce)
  • 10g Wasabi
  • 10g Erba cipollina
  • 10g Bietole rosse
  • 5g Cerfoglio
  • 5g Aneto
  • 10g Misticanza
  • 100g Zucchero
  • 15g Foglia di Kaffir
  • 22g Zenzero
  • 10ml Olio d'oliva
  • 10g Ravanello rosso
  • 33ml Salsa leggera di soia 
  • 10g Sale
  • 5g Pepe
  • 10g Lime



  • Purea di palmisto: far bollire, il palmisto, l'aglio, il latte e una foglia di alloro per 30 minuti.  
  • Frullare il tutto.
  • Sciroppo di Kaffir: far bollire, le foglie di kaffir, lo zucchero e il limone  verde  per ricavare uno sciroppo.
  • Pasta di zenzero: Frullare lo zenzero e l'olio d'oliva.
