Trenza de atún, rémoulade de corazón de palmito, vinagreta de hojas de lima kaffir y jengibre

  • 500g Corazón de palmito
  • 10g Ajo
  • 200ml Leche
  • 1pz Hoja de laurel
  • 500g Atún (cortado en tiras
  • 10g Wasabi
  • 10g Cebollino
  • 10g Remolacha
  • 5g Perifolio
  • 5g Eneldo
  • 10g Mezclum
  • 100g Azúcar
  • 15g Hoja de kaffir
  • 22g Jengibre
  • 10ml Aceite de oliva
  • 10g Rábano rojo
  • 33ml Salsa de soja clara 
  • 10g Sal
  • 5g Pimienta
  • 10g Lima



  • Puré de palmito: cocer palmito, ajo, leche y hoja de laurel durante 30 minutos.
  • Pasar por la batidora.
  • Sirope de kaffir: cocer hojas de kaffir, azúcar y limón verde  hasta obtener un jarabe.
  • Paté de jengibre: Pasar el jengibre y aceite de oliva por la batidora.
