Gamba gorda y vieiras al grill

  • Pelar la gamba retirando delicadamente la piel y dejando el cuerpo unido a la cabeza.
  • Poner a marinar con sal y pimienta. Dejar enfriar durante 20 minutos.
  • Cortar y picar el hinojo.Condimentar con sal y pimienta.
  • Derretir una nuez de mantequilla en una sartén y un chorrito de aceite de oliva.
  • Saltear el hinojo a fuego fuerte de 2 a 3 minutos. Reservar.
  • Salpimentar la vieira y cocinar a la parrilla de 1 a 2 minutos cuadriculando los dos lados.
  • Disponer el hinojo en el centro del plato. 
  • Poner rodajas finas de marlín ahumado delante del hinojo.
  • Disponer tres hojas de cilantro fresco sobre el marlín y dos tomates cherry cortados por la mitad.
  • Organizar alternando tres perlas sabor fresa y mango delante del marlín.
  • Depositar la gamba con la cabeza hacia arriba sobre el hinojo.
  • Pasar la vieira por perejil picado por una sola cara.
  • Colocar la vieira por el lado sin perejil, mostrando el cuadriculado de la parte superior, junto al hinojo.
  • Por último, añadir algunas flores comestibles como decoración del plato.
