Langostinos de agua dulce salteados y puré de calabaza y jengibre con leche de coco y perejil

  • 8 calamares (gamba de agua dulce)
  • 100 g de puré de perejil
  • 125 g de leche de coco
  • 50g de cebolla
  • 200g de calabaza
  • 15 g de jengibre
  • 20 g de semillas de sésamo negro
  • 10 g de semillas de sésamo blanco
  • 1 cucharadita de glucosa
  • 10 g de leche
  • 20 g de mantequilla salada
  • 5 g de guindilla roja
  • Sal y pimienta

 

Descripción:

Pelar las gambas de agua dulce

"Para preparar las galletas de tuile de cereales: Hervir la leche, la mantequilla y la glucosa durante cinco a diez minutos, agregar la mezcla de cereales y cocinar a fuego alto durante 5 minutos.

Triturar la calabaza y agregar el jengibre braseado.

Para preparar la salsa:

Rehogar la cebolla en rodajas finas y agregar la leche de coco; reducir, licuar y agregar el puré de perejil.

Utilice la masa de cereales para hacer bolitas de 5 g en una bandeja para hornear antiadherente; cocine en el horno a 160 ° C.

Dejar enfriar.

Presentación:

Sofreír las gambas de agua dulce, colocar encima una galleta de tuile de cereales y hornear durante dos minutos.

Dibujar tiras con el puré de calabaza, colocar encima las gambas de agua dulce y servir la salsa a un lado.
